RT BE88U
and (2) RTAX3000
which one should I use as the first one off the fios? all of them will have cat 6 backhaul.

I'd try the RT-BE88U as the primary router and the rest as nodes. Hopefully that works okay as it is dual band while the RT-AXE7800 is tri-band...
