Which firmware version are you on? And are you talking about the Google page after you tap on Google search bar widget, or the actual google.com page?
I'm still on Android 11 WW_30.41.69.174, and the search bar on both the widget and Google page is displaying dark mode just fine for me.
I guess it'll help us to see if you can upload a screenshot.

Search in Dark theme on Google
On your computer, do a search on google.com.
If you want the same Search settings across desktop browsers, sign in to your Google Account.
At the top left, click Settings.
On the left, click Appearance.
Choose Device default, Dark theme, or Light theme.
At the bottom, click Save.
Regards,
Will
