I want to connect 2 external displays to X510UF. I have an HDMI and a USB-C port (marked with SS). I'm thinking of using a USB-C to HDMI adaptor for the second display, but I'm not sure if the port supports video. I can't find anything of the sort in any docs.

Unfortunately, the USB TYPE-C of X510UF does not support display.
