The brightness changes drastically depends on the amount of light it senses, even when the option is disabled on the settings
I some time use the phone in the middle of the day and while I'm using it and moving it slightly the brightness will increase and decrease from time to time without even showing on the notification panel
Anything I can do to disable that?

Fix it now!
Go to Control Panel.
Find Hardware and Sound.
Choose Power Options, then click on Change plan settings next to your active power plan.
Click on Change advanced power settings.
Scroll down to Display.
Under Enable adaptive brightness, switch it off for both the battery and plugged-in modes.

The Firmware version can be found on Settings>System>About phone>Build Number.
The build number is the firmware version and it should look like WW_32.2810.xxxx.xx
