Dreadful call quality with Bluetooth headset

Hello everyone, I hope you can help me.
When I use bluetooth headsets the person I'm talking to can't hear me well. They tell me my voice is robotic and has an echo. For this reason I can't do long calls, beacause their poor quality is very annoying for the others. On the other hand I can hear them perfectly, no issues by my side.
I tried with my Huawei Freebuds 3 and with Apple earpods, but it's the same.
Generally speaking, this phone call quality isn't very good, but still tolerable.
Instead the calls made via Bluetooth headsets are terribile.
Do you have any suggestions? Anything that can help me? Did some of you have the same issues?

Tuning off Volte? I don't know how to do it.
During a call, under the name of the contact and above its telephone number, an "HD" symbol appears. Does it mean that Volte is active?
How can I turn it off? I searched within the settings but couldn't find anything.

HD to HD Voice. Sieć i Internet/Internet/Sim.../VOLTE.
There isn't that option and I'm sure my carrier doesn't support Volte.
It's a shame because the phone is overall very good. I'm afraid I'll have to return It.
This is a very odd thing, it does sound like there could be some interference going on.
I noticed with Zenfone 8 BT is that it defaults to the lowest possible bit rate. From my experience, playing games with bluetooth headset, the sound is trash to almost cutting off if there are too much sound/music going on. Another is I have a Qudelix 5k and using LDAC with adaptive bitrate. The bit rate is always the lowest (330 kbps) no matter how close my phone is.
It could be but consider that the problem comes out only with the headsets. No issue with the car bluetooth.
when connected to your device, to into developer settings and change the bluetooth codec.
I tried. I don't know if It Is due to your suggestion, but now the interlocutor seems to hear me well.
