Today I noticed that my Instagram is crashing a lot, in every 10 seconds it closes by itself or it is not starting at all

I also updated Instagram to the latest version.

Instagram crashing again and again

Go to Settings - Apps & Notifications - Instagram - Press on the 3 dots top right and press on Uninstall updates.
See if this works, without the update. If it does, update again to see if you get the same issue.

It's crashing for most android phones globally today ,wait for an update from play Store or uninstall updates
