I am running Debian 12 on two NUC 12s (NUC12WSHi5). One works perfectly; the other periodically (every few weeks?) locks up, requiring a power cycle to recover. It is lightly loaded and doesn't appear to be overheating, but there is no useful information in the logs after the lockup so maybe bad RAM or NVMe?
I'd like to enable the hardware watchdog because I can live with a periodic reboot, but not with the machine simply being down until I notice. I downloaded the latest NPSS (2.0.10), but when I try to install the driver, it fails:
sudo dpkg -i intel-nucprosoftwaresuite-driver_2.0.10-2_all.deb (Reading database ... 99753 files and directories currently installed.) It sounds like there might be a conflict with the official NPSS package on Debian 12. Have you tried installing the dependencies manually first? Especially the intel_npss_wdt and intel_npss_wmi modules you mentioned failing to load.
There might be some info on manually installing the drivers on https://wiki.debian.org/InstallingDebianOn/Intel/NUC10i3FNK.
