If you are taking about this:
When you change brightness level there is an option to tap on the extreme right, tap on the same to get option such as adaptive brightness.
Next can you elaborate with an example what exactly you men by Clock should appear on double tap?
If you are talking about double tap gesture that is available in Gesture in settings.
