ASUS X670E-F motherboard sound issues

Recently built a new system with a Ryzen 7900X3D and the above motherboard - and G.Skill 6000mhz Cl30 ram. I've tested in both Windows 10 and Windows 11 so it's not the OS. Whenever I am using optical audio I get constant stuttering / dropping out every few seconds (more frequent if I increase the sample rate). This does not occur with the onboard 3.5mm audio - or with USB audio from a DAC .Just when using Optical Audio.

To add confusion to the matter - If I use HDMI audio the speakers on my TV are fine - but if I plug optical into the tv I get the stuttering again - It's not the cable or reciever as they work fine with my other computer.

What's going on here? Im at a loss...
