The main node in my setup is broadcasting 6ghz but the satellite node is not. I’ve found a thread here that explains how to fix that issue (by reverting the firmware to an older version), but it also mentions that everyone has the satellite node hardwired.
So for my use, can an ET8 satellite node that is connected to the main one wirelessly still broadcast 6ghz when the router is working properly?
It took me many hours of troubleshooting recently to get the main node to broadcast 6ghz, so I’m hesitant to start reinstalling firmware and messing around with settings again…

They used to until the May update this year, but it took making specific Internet GUI changes with each of the previous updates. All you can do now is use each in router mode to get 6e. I have four ET8 mesh nodes I used as wireless mesh nodes for 6e clients before the May update. They all did fine until May. It sucks. I just stopped using what we're my perfectly good ET8s period. Don't expect any help from ASUS with this. They've proved they don't care.

If it has to be wireless backhaul I see that you can set the ET8 as Repeater. Have you tried this?

Yes, in repeater mode I get repeated warnings the router is resetting to a mesh node. If you click on the message they will reset to mesh nodes.

It's not clear but did you delete it from the main router AiMesh list? (This would factory reset the node)...
