Stock Launcher

Why can you not set a different launcher as your default? You can install a different launcher and it will work, but it will always revert back to stock launcher when you go to the home screen.
Can this be rectified?

You need to set the launcher as default app in settings.
Go to Settings >> Apps & Notification >> Default Apps >> Home App
Select which even launcher you need to apply

I don't actually see it as a problem. I'll just have to find some apps that will help me customise the phone to my liking. And besides I don't want to return it to then have to spend £400 more to get the 12GB version!

Coming from the Samsung Galaxy S9+, that is an Android setting I know about. Unfortunately the same setting is not on my CN Tencent Version. See attached images.
Any suggestions, or am I stuck as is?
You're stuck as is. I just double checked on my test unit, and it has Launcher options available inside Home apps.
The Tencent version is an unsupported configuration, and will have all kinds of weird issues like this. I recommend contacting your reseller for a refund.
